butternut squash bake
so when we finally sat down to dine last night at 8:00pm (luckily not one of us had to go out after tea for anything) we did enjoy the new recipe very much!
The flavours in it were just right, and I couldn’t taste the (one) egg so it was fine. I substituted half the quantity of pine nuts for walnuts, and that worked great. There was also no problem with the lasagna sheets (I did separate them as much as I could before packing it into the tin) and the pumpkin was cooked to perfection. Thank you to Sebastian who sliced up the pumpkin while I was out. Here is the recipe for you to try…
though I admit I’ve never grated a tomato in my life (and discarded the skin), I just diced up one whole tomato, and halved a handful of cherry tomatoes, and it worked absolutely. And of course by 8:00pm it was too dark to go outside and find parsley like I had planned, so I just added a bit more fresh thyme on top.
Let me know if you try it!
