lazy, lazy days
I’m loving having 4 whole days off over Easter! Ben and I are enjoying ourselves and feeling very relaxed.
The kids are off at youth conference and Seb camping at the destination we usually go to over Easter, with some of our friends. I heard they had hot, hot weather yesterday accompanied by a major dust storm- which, down at that venue with all the dirt, could not have been pleasant. I feel sad for them, but I’m sure today was a better day.
So what have we been up to?
Well I tried a new recipe from the new “plant to plate” vegan based thermomix cookbook- Mee Goreng- and it was very tasty. Next time I will more than double the sauce ingredients though, to make it feed more people. But it was delicious.
We went to Pt Elliot on Friday, did a bit of shopping, and had a look around. We had a nice lunch at “Hector’s” at Goolwa down on the wharf and a mosey through lots of shops.
When we came home I made some nougat in the thermy- it worked a treat! But is incredibly sweet. I put in macadamia, pistachios and dried blueberries. I’ll have to include a photo of that too, but here is a photo of the quince paste all packaged up ready for gifting.
And yesterday we had lunch at a lovely Indian restaraunt in Clare- called Indii, that Elliot recommended to us from his trips away for work
and stopped in at Martindale Hall, because although I’ve been there before, I haven’t been with Ben.
And for afternoon tea today, a batch of apple crumble muffins. The recipe was from here, but no, when one buys a thermy why would you rub in the butter by hand? So I made the crumble topping first, tipped it out, cooked the apple, added the butter to melt, then added the other ingredients to blend briefly. Easy, peasy.
